Food cost % is the share of sales that went into the food you used. It is not profit. Rent, salaries, energy, packaging, commissions and waste still sit outside this number.
It rises when purchase prices move, portions drift, wastage increases, or recipes are not followed. It also rises if sales are under-recorded.
